Ok, so i'm getting a bit bored with where i'm at and have new-year-resolved to learn some solos to stretch me a bit.

It's hard to say what will stretch you out. What's a stretch for me may be a piece of cake for you. It's not a solo exactly I guess, but the opening lick for Sweet Child O'Mine by GNR took me a couple weeks to get and even then the first time live was a mess.

AC DC Ride on, perfect solo, nice mix of major/minor, fits the song perfectly, top class timing. It's all there and it ain't over the top.

No, I thought you were joking, it's hard to tell on the interweb sometimes. I was just saying the Ramones are harder to pull off properly than some other 3 chord bands.

It was the very first solo I ever set out to learn. The intro solo is reasonably simple too.
There's plenty of other versions with video on YouTube but that version in the link is the definitive one for me.

The original studio version was quite different because is was dubbed twice as a harmony part lead.

This is hard because my tastes are all over the map:

Reef: Back In My Place is one of the coolest solos ever.

Jimmy Eat World: The Middle - really cool solo. Remember the Drop D.

New York Dolls: Gotta Get Away From Tommy - some similarity to my first two choices actually...

Mountain: Theme For An Imaginary Western - one of the most tuneful and melodic solos ever....

Johnny A.: Jimi Jam - one series of crazy guitar playing

Neil Young: Cinnamon Girl. basically one note but fun.

Aerosmith: Somebody - wicked cool solo...

ZZ Top: La Grange

+1, and I'd also add from AC/DC; Live Wire, TNT & Whole Lotta Rosie.

Also, not necessarily my top ten but off the top of my head and fairly and squarely in the classic rock/classic solo camp:

Stairway to Heaven - LZ
Sweet Child 'o Mine - G'n'Rs
My Sharona - The Knack

And for something different,

Kid - The Pretenders (relatively simple, but oh so tastefully played Mr Honeyman-Scott)
