I think the best way to answer this would be to consider which one died before their creative peak. I mean Zappa, Lennon, Moon, were all past their creative peaks and don't say Lennon's Double Fantasy was an example of great creative work, it was good but not great. Zappa hadn't done anything great in years prior to his death. With that criteria it is still really a tough thing to decide, I'd have to say:

Buddy Holly
Jimi Hendrix
Janis Joplin

Hard to argue that any of those artists still had their best work ahead of them. Buddy was just hitting his stride and most likely would have been a major force in recording technology and guitar playing. Janis and Jimi, both had huge blues careers ahead of them and were young enough to still be finding themselves - would have been a great journey to watch. Might not have evolved how we think it might have, but it might have been better, who knows.

Now artist who may not have given us much more than they did but were just peaking at times of their death's and would be interesting to watch include:

Layne Stayley - had he gotten clean, AIC could have been one of the biggest bands on the planet. But he needed Jerry Cantrell, Mad Season is good but not great.

Bon Scott - AC/DC probably would have followed a career track similar to what they did, but it would have been fun with Bon

Randy Rhoads - the big unknown, he was rumored to be quitting the Ozzy band and going off on a classical guitar journey. Had he done that, I doubt we'd be talking about him like we do today. But we may have also gotten some more work with Ozzy which would have been incredible. I mean come on, Bark at the Moon is really a horrible record.

Then you have the support players in bands (major contributions though) and while I would have liked to see these folks live as I was a big fan of them, not sure if their contributions would have changed much for their respective bands or careers. In fact, had Burton lived, I don't Metallica would have been as big as they became - they took a path that most likely would not have been one they would have taken with Cliff.

Cliff Burton -- see comment above
Keith Moon -- The Who were passed their peak when he passed
John Bonham -- Zeppelin were past their peak as well
Brian Jones -- The Stones were actually better after he passed, their best material was the Mick Taylor era
Dimebag -- big fan, great guy (knew in passing as he was local) but was not breaking any new ground later in his career. Damageplan wasn't really that great and the last two Pantera albums were just OK.

It was really the same story with Berry Oakley. He was already one of the best ever and had his whole life ahead of him.

It's no coincidence that I've never been on a motorcycle in my entire life.
