Pots are resistors with variable resistance. Basically, they always control something else. Volume knobs etc. are pots, so it's pretty obvious most guitars have 'em.
I think you mean caps? Capacitors are the things that allow you to roll off certain frequencies according to the value installed. The tone pot controls the amount of 'exposition' of the signal to the cap.
So if you think your guitars tone pot isn't doing what you want (like, it changes treble and mids), you can swap it for a cap that only alters the higher frequencies, leaving the middle intact. For example.

I changed the pots in my 72 deluxe tele to 500k. I'm getting so much hum/buzz.. Taking it to a guitar tech to see if I screwed up.

The difference in tone between a guitar with good pots and one with so-so pots is very noticeable.

RSGuitarworks has some excellent kits for upgrading. They can make a huge difference in your tone. You will especially notice how turning the knobs makes a huge difference in the sound.

How much do they cost is the basic figure, but it is a bit more complicated.

Yes... to his last question in the original post, if it's a "winning team" there's no good reason to mess with it.

You know, in 1987 a major American airline company saved 40.000$ by putting one olive less in the meals for second class.
