“Open up” in this context, just means “decrease gain.” 12AY7 is just a lower gain triode than the 12AX7. If it gives you more range on the volume control before breakup, and makes you happier, then it’s the magic bullet.

Your OR80 was built in a day when US wall voltage was like 115-117 VAC. Today it’s more like 120-125 VAC. That turns all the secondary voltages (the voltages inside the amp) up by the same percentage. You need some way to knock the voltage at the input to the amp back down to the old voltage level. ...

Also, if your tubes are red-plating, you might have a high frequency oscillation in your amp that is messing with the bias on those tubes. This is a thing that happens to some 70s OR120s.

Shuguang tubes are supposed to be the shizz in vintage OR120s. I have a set and haven’t installed them in mine yet. I’ve been hearing about them for years.

I don’t see much point in buying a vintage Orange 4x12, especially when you can get a newer one used with Celestions in it for 1/2 that price. $1200 is STEEP for a 4x12, but I don’t really have a good reference point on the vintage cabs. If it was a 6x12 from the 70s, okay, $1200 all the way.

I’ve only succeeded by searching eBay for knobs for old lab test equipment. And even then, I’ve only found knobs that kinda match. Those knobs are not made by anyone anymore. The later Orange knobs can be found on eBay or I think Orange was selling them at one point.

I’ve always used lamp cord with 1/4” plugs soldered on. Works just as well as any brand name speaker cable.
