Should work OK - I used to have an OD808... worked fine for liquid lead sounds: will take you anywhere from lighter-waving light solos to heavier sounds if you layer it the right way.

Hot 100s are fine with Orange or Matamp - tried them with both. Not as nice as some of the higher end Celestions, but fine all the same...

Chalk it up to experience: maybe he was just having a bad day too.
And put it this way... one good reason to learn to do your own regular tech work! Aside from levelling frets, I do pretty much everything on my acoustics & electrics now. Will save yourself a heap of cash.

If the cables are too short, get some other lengths of wire or cabling and just touch them together using crocodile clips, electrical tape or whatever so you can extend the pickup wires. You can trace a short if you know what you're doing, but as you're asking, i'm guessing the answer is no! You bas...

Take the pickup cables and - if they reach - hold them directly to the hot & ground terminals on the output jack. Plug in a cable and hit the strings.
That'll tell you if it's the pickup or your soldering / volume pot.

No, the valves don't need to be balanced either way. Just shove in whatever sounds best. It's a bit of a fudge by sellers to tell you that they do.

They look like Neutrik plugs on some sort of cabling with 'armour plating'. Can't vouch for the cabling failure rate, but the plugs should be solid. Look good as long as they're not overpriced.
